Chocolate Haystack Cookies

A fast and easy, one-pot, no-bake recipe with the goodness of oats, coconut, and cocoa. A terrific "first-recipe" for the littlest chefs.

Ingredients

  • 1 cup white sugar 
  • 1/4 cup milk
  • 1/4 cup butter
  • 1 tsp vanilla extract
  • 2 tbsp (heaping) cocoa powder
  • 1 1/2 cups oats (quick or regular)
  • 1/2 cup shredded coconut (sweetened or unsweetened) 

Directions 

  1. Over medium heat, add the sugar, milk and butter to a medium-sized pot and bring to a rolling boil. Stir to ensure all the ingredients are well combined.
  2. Add the cocoa powder, mix well, and let boil for 1½ to 2 minutes (don't over-boil, otherwise the sauce may become crumbly when cooled).
  3. Remove from heat and stir in the vanilla extract.
  4. Add the oats and coconut. Quickly stir with a wooden spoon or spatula until the mixture is completely combined.
  5. Drop small portions of the mixture by two spoons onto a parchment-lined baking sheet.
  6. Allow to cool at room temperature until firm OR place the baking sheet directly into the freezer and enjoy the cookies as a frozen treat.
